Healthy And Hearty, Quick Chili Recipe For Fall

Fall weather brings with it the urge to eat warm, comforting foods. It’s no different for people in recovery, and following a balanced diet is part of the healing process for those who are looking to achieve their goal of long-term sobriety.

Cooking As A Recovering Addict

Learning to cook, and not simply appreciate food, is a good strategy for recovering addicts. Cooking is an activity that can easily be shared with others, creating a sense of belonging and shared purpose.

This chili recipe is a quick and easy one that doesn’t need to simmer on the stove for several hours before serving. It can be prepared in about 30 minutes, which makes it a fuss-free option for dinner after a day spent enjoying time with friends, hiking, going to the movies or shopping. The addition of bacon gives it some meaty texture and a hint of smokiness that is sure to please.

Quick And Hearty Chili

Total Time: 30 minutes
Makes 4 servings

Ingredients:

2 Tablespoons vegetable oil
3 slices of bacon, cut crosswise into 1/4 inch strips
1 onion, diced into 1/4 inch pieces
2 jalapeños (optional), seeded and cut into 1/4 inch pieces
2 cloves garlic, minced
1/4 cup chill powder
1 – 15 ounce can Great Northern beans, drained and rinsed
1 – 15 ounce can pinto beans, drained and rinsed
1 – 28 ounce can diced tomatoes
2 cups chicken stock or low-sodium broth
Kosher salt and freshly ground pepper
Chopped cilantro and sour cream, for serving

Directions:

  1. In a medium-sized soup pot, heat the vegetable oil until hot. Add the bacon strips, onion, jalapeños and garlic to the pot. Cook over medium high heat until the onion is softened, about five minutes.
  2. Add the chili powder and cook over medium heat until the ingredients are fragrant, about one minute.
  3. Stir in the Great Northern and pinto beans, diced tomatoes and chicken stock. Bring all to a simmer.
  4. Reduce heat to low and simmer until thickened, about 15 minutes. Season with kosher salt and freshly ground pepper to taste. Serve in individual bowls with cilantro and sour cream.
